Leche de Alpiste (Alpiste Milk)

20 Minutes Prep + 12 Hours Soaking Seeds

3 Servings (1 cup or 250 mL each)



Briefly sort alpiste seed to remove any foreign matter such as small stones, lentils or grains.

Rinse alpiste in a fine mesh strainer under running water.

Put seed in a bowl and cover with 2 cups (500 mL) water. Place in refrigerator overnight or 12 hours. If leaving longer, drain and refersh water.

Drain seed using the fine sieve.

Put seed in a blender. Add 1 cup (250 mL) water. Blend one minute, until seeds are broken up.

Add 2 cups (500 mL) water and blend three minutes, until liquid is milky looking.

Using a very fine sieve or through a few layers of cheese cloth, strain the alpiste milk into a jar or container with tight-fitting lid. Discard the solids (grit).

Store in refrigerator for up to three days.
