Steps

  • Place alpiste flour, gluten-free flour, sugar, baking powder, xanthan gum and salt in a food processor and mix well.

  • Add shortening and pulse until no large pieces of shortening remain (4 quick pulses).

  • Remove from food processor into an airtight container or sealable bag. Store for up to one month at room temperature or longer in refrigerator.

  • 1 1/2 cups (375 mL) gluten-free all purpose flour

  • 2 Tbsp (25 mL) granulated sugar

  • 2 Tbsp (25 mL) baking powder (avoid products containing wheat starch)

  • 2 tsp ( 10 mL) xanthan gum

  • 1/2 tsp (2 mL) salt

  • 1/2 cup (125 mL) cold shortenining, cubed
