Fudge Pudding

15 Minutes Prep + 40 Minutes Cooking

9 Servings (3-inch square each)



Position oven rack in the centre of the oven. Preheat oven to 350˚ F (180˚ C).

Spray a 9 x 9 inch (23 x 23 cm) baking dish with nonstick cooking spray.

In a bowl, combine flours, sugar, cocoa, baking powder and nuts.

Stir in milk and oil. Pour batter into prepared pan. 

Pour coffee or water over batter.

Bake 40 minutes. Let stand at room temperature. Serve hot or cold; plain or with whipped or ice cream.


2/3 cup (150 mL) alpiste flour

2/3 cup (150 mL) oat flour

1/2 cup (125 mL) granulated sugar

3 Tbsp (50 mL) cocoa powder

1 Tbsp (15 mL) baking powder

2/3 cup (150 mL) chopped walnuts or pecans

1/2 cup (125 mL) 1 % milk

2 Tbsp (25 mL) canola oil

1/2 cup (125 mL) brown sugar, lightly packed

1/4 cup (50 mL) granulated sugar

2 cups (50 mL) cold coffee or water
