Breakfast Smoothie Parfait

2 Servings (1 cup or 250 mL each)



In a small processor or blender, combine avocado, milk, cottage cheese/tofu/yoghurt, alpiste/water mixture, coconut, honey and lemon juice. Blend until smooth.

Divide between two parfait glasses or tall glasses, layering with desired fruits, nuts, granola, etc.

Notes: An immersion blender can also be used to puree.

You can prepare the parfait the night before and store, covered with plastic wrap, in the refrigerator over night.


1 ripe   avocado (just yields to gentle pressure), peeled and cubed

1 cup (250 mL) dairy  or dairy-free milk

1/2 cup (125 mL) creamed cottage cheese, silen tofu, or plain Greek yoghurt

2 Tbsp (25 mL) alpiste flour + 1/4 cup (50 mL) water, stirred together

2 Tbsp (25 mL) unsweetened, desiccated coconut

1 Tbsp (15 mL) honey

1 Tbsp (15 mL) fresh lemon or lime juice

2 Tbsp (25 mL) protein powder (optional)

Toppings of choice: granola, nuts, fresh fruit and berries
