Apple Rhubarb Betty

15 Minutes Prep + 50-60 Minutes Baking

Position rack in bottom one third of oven. Preheat oven to 350˚ F (180˚ C).

In a bowl, combine apples and rhubarb. In a 9 x 13-nch (22.25 x 32.5 cm) glass baking dish, place apples and rhubarb in bottom of baking dish. Pre-cook for 30 minutes.

In a bowl, mix all purpose  and alpiste flours, baking powder and baking, soda.

In another bowl, cream brown   sugar and butter, mix in egg, milk and vanilla.

Combine wet and dry   ingredients together to form a cake batter. Pour cake batter over   pre-cooked apple, rhubarb mixture.

Bake 25 minutes.


4 cups (1 L) chopped apple

4 cups (1L) chopped rhubarb

1/2 cup (125mL) all purpose flour

1/2 cup (125 mL) alpiste flour

1 tsp (5 mL) baking powder

1/4 tsp (1 mL) baking soda

1/2 cup (125 mL) brown sugar

1/4 cup (50 mL) butter

1 egg

1/4 cup (50 mL) milk

1/2 tsp (2 mL) vanilla
