Alpiste Kale Salad with Avocado Dressing

Steps

  • To prepare salad: In a large glass bowl or individual glass bowls, layer alpiste, red pepper, kale, onion, corn kernels and black beans.

  • To prepare dressing: In a mixer bowl, combine avocado, cilantro, lime juice, canola oil and sea salt. Blend until smooth.

  • Mix dressing into salad just prior to serving.

Ingredients

SALAD

  • 1 cup (250 mL) cooked alpiste

  • 1 cup (250 mL) chopped red pepper

  • 2 cups (500 mL) fresh baby kale

  • 1/2 cup (125 mL) chopped red onion

  • 1/2 cup (125 mL) cooked kernel corn

  • 1 cup (250 mL) cooked black beans, rinsed

DRESSING

  • 1 large avocado

  • 1/2 cup (125 mL) fresh chopped cilantro

  • 1 large lime, juiced

  • 2 Tbsp (25 mL) canola oil

  • 1/4 tsp (1 mL) sea salt
