Vegetarian Alpiste Burger

Steps

  • In a large bowl, mash beans.

  • Add mushrooms, shallots and alpiste flour. Continue to mash.

  • In a small food processor, pulse together walnuts, sage, oil and salt to form pesto.

  • Mix pesto in with the bean mixture until thoroughly blended.

  • Form into 1/3 cup (75 mL) patties.

  • Place between wax paper and chill until ready to cook.

  • In a nonstick skillet that has been sprayed with nonstick cooking spray, over medium-high heat, fry 3 to 4 minutes per side until browned.

Ingredients

  • 15 oz (540 mL) black turtle beans, rinsed and drained

  • 1/2 cup (125 mL) alpiste flour

  • 1 large shallot

  • 1 cup (250 mL) finely diced and packed button mushrooms

  • 1/2 cup (125 mL) walnuts

  • 1/4 cup (50 mL) fresh chopped sage

  • 1/4 cup (50 mL) olive oil

  • 1 tsp (5 mL) coarse sea salt
