Gluten-free Master Baking Mix
3 1/2 cups (875 mL)
Place alpiste flour, gluten-free flour, sugar, baking powder, xanthan gum and salt in a food processor and mix well.
Add shortening and pulse until no large pieces of shortening remain (4 quick pulses).
Remove from food processor into an airtight container or sealable bag. Store for up to one month at room temperature or longer in refrigerator.
1 1/2 cups (375 mL) alpiste flour
1 1/2 cups (375 mL) gluten-free all purpose flour
2 Tbsp (25 mL) granulated sugar
2 Tbsp (25 mL) baking powder (avoid products containing wheat starch)
2 tsp ( 10 mL) xanthan gum
1/2 tsp (2 mL) salt
1/2 cup (125 mL) cold shortenining, cubed
